Easter is literally around the corner, and if you are still working on your menu, I’ve got you covered on desserts!  Which is good, because I’m no good at baking ham.

I’ve put together some ideas for cakes, cupcakes, cookies, and no-bake treats that are sure to satisfy a variety of tastes.  And whether you are planning on a large or smaller crowd for this year’s celebration, there is enough variety that you could plan on adding 1 or 2 desserts to your menu.

Even though I primarily bake Mini Cakes, I have added a regular-sized cake to the list.  The Berry Mousse Genoise Cake is a showstopper and the berry flavor is the epitome of a springtime celebration dessert. 

And of course, no cake collection for Easter would be complete without a classic Carrot Cake!
