Some of the best desserts don’t need a reason. No birthday, no dinner party, no excuse beyond wanting something sweet at the end of the day. These small batch desserts are built for exactly that — familiar flavors, simple ingredients, and yields that are scaled for two (or a few), so nothing goes to waste. From a classic chocolate chip cookie to a slice of vanilla cake, every recipe here delivers the real thing in a perfectly portioned size.

Small batch baking has been my approach for years — not because I’m trying to be restrained, but because I live in a two-person household and a full pan of brownies will always leave leftovers.

So I’ve put together a list of some of my favorite desserts — everyday staples I think everyone should have in their baking repertoire. Real recipes, from a real kitchen, and built for real cravings.

But these aren’t small batch desserts that have simply been cut in half. Through years of recipe testing, I’ve learned that each dessert has its own nuance. Cakes and cupcakes are sensitive to egg ratios and pan size to make sure the rise and crumb are perfect. Even no-bake cakes want the right size pan to achieve deep, creamy layers.

  • 6-inch cake pans — Essential for the single and double layer cakes on this list. The right pan size makes a real difference in rise and structure.
  • Mini loaf pans — The right vessel for banana bread and pumpkin bread — smaller pans mean properly portioned slices and even baking.
  • Medium cookie scoop — My second favorite kitchen tool. Gives you consistent, perfectly sized cookies every time. Not too big, not too small. And I use it to portion cake batters.
  • Mini skillet — For the strawberry cobbler and any other warm, dig-in dessert that’s better served straight from the pan.
  • Shot glass measuring cups and odd-size measuring spoons — Small batch recipes often call for amounts that standard measuring sets don’t cover. These fill the gap.
  • Mini whisk — Small enough to actually work in a small bowl without making a mess.
