Small Batch Desserts for Two (All the Flavor, No Leftovers)

Some of the best desserts don’t need a reason. No birthday, no dinner party, no excuse beyond wanting something sweet at the end of the day. These small batch desserts are built for exactly that — familiar flavors, simple ingredients, and yields that are scaled for two (or a few), so nothing goes to waste. From a classic chocolate chip cookie to a slice of vanilla cake, every recipe here delivers the real thing in a perfectly portioned size.

Small batch baking has been my approach for years — not because I’m trying to be restrained, but because I live in a two-person household and a full pan of brownies will always leave leftovers.
So I’ve put together a list of some of my favorite desserts — everyday staples I think everyone should have in their baking repertoire. Real recipes, from a real kitchen, and built for real cravings.
But these aren’t small batch desserts that have simply been cut in half. Through years of recipe testing, I’ve learned that each dessert has its own nuance. Cakes and cupcakes are sensitive to egg ratios and pan size to make sure the rise and crumb are perfect. Even no-bake cakes want the right size pan to achieve deep, creamy layers.
Cookies and bars often can’t take on a whole egg, so I’ve made sure the fat content (i.e. butter!) compensates for that. And when it comes to seasonal recipes that showcase fruit, you can be sure that fruit flavor shines through.
This is a list worth saving (I also give you my favorite small batch baking essentials at the end) — for the weeknight chocolate craving, the extra strawberries in the fridge, or any moment that just calls for something sweet.

Small Batch Cakes and Cupcakes
This is the heart of the collection — classic flavors in a perfectly portioned size. The 6-inch cakes are built for two, the cupcakes yield four to six, and every recipe here is developed from scratch rather than halved from something larger. Everyone should have a good cake recipe, and the small chocolate layer cake and vanilla mini cake are the ones to bookmark first.

Small Batch Baking Tools Worth Having
Small batch baking is more enjoyable — and more reliable — with the right equipment. These are the tools I reach for consistently when making the recipes on this list:
- Small 3-quart mixing bowl — My personal favorite. The small bowl works with a standar tilt-head mixer and keeps smaller doughs and batters from getting lost in a full-size bowl.
- Hand mixer — Great for frosting, whipped cream, and small batches of batter when pulling out the stand mixer feels like too much.
- 6-inch cake pans — Essential for the single and double layer cakes on this list. The right pan size makes a real difference in rise and structure.
- Mini loaf pans — The right vessel for banana bread and pumpkin bread — smaller pans mean properly portioned slices and even baking.
- Medium cookie scoop — My second favorite kitchen tool. Gives you consistent, perfectly sized cookies every time. Not too big, not too small. And I use it to portion cake batters.
- Mini skillet — For the strawberry cobbler and any other warm, dig-in dessert that’s better served straight from the pan.
- Shot glass measuring cups and odd-size measuring spoons — Small batch recipes often call for amounts that standard measuring sets don’t cover. These fill the gap.
- Mini whisk — Small enough to actually work in a small bowl without making a mess.
